Preheat the oven to 350° Fahrenheit. In a large bowl, mix together the eggs, oil and sugar. Add the yogurt, apple, zucchini and carrot and stir to combine. In another bowl, mix together the flour, Oregon Chai, baking powder and salt.
Gradually add the dry ingredients to the wet ingredients, stirring to combine. Spoon the batter into oiled mini muffin tins and bake for 10-15 minutes.
