Roasted Chai Chicken
Ingredients
Oregon Chai The Originalâ„¢ Chai Tea Latte Concentrate | 2 Tbsp. |
Reduced sodium soy sauce | 1 Tbsp. |
Chicken | 1 whole |
Onion | 1/2 |
Garlic | 3 cloves |
Fresh ginger root | 1 inch slice |
Fresh figs cut in half, lengthwise | 5 |

Directions
Heat oven to 325 degree F oven. Rinse chicken in cold water. Drain. Rub salt in cavity. Place in baking dish. Stuff cavity with onion, garlic, ginger, and fig halves, Original Chai concentrate and soy sauce. Place one fig half under the skin next to each breast. Bake one hour or until golden and the leg moves easily. Baste with juices every 15 minutes. Serves 4
