Fruit-filled Hamantaschen, the traditional Jewish treat, with Oregon Chai Original Chai concentrate - the tea for life. Make dough: cream butter with sugar. Add egg and vanilla and continue creaming until smooth. Add flour, baking powder and salt. Blend until well mixed and forms a ball. Refrigerate dough 2 to 3 hours, or overnight. Make filling: simmer prunes, raisins and Original Chai concentrate in a covered pan for 15 minutes. Add nuts and apple. Place in food processor and grind. Add sugar, lemon juice and rind and mix well. To form Hamantaschen: roll out ¼ of the dough to 1/8 inch thick. Cut into 2 ½ inch circles. Moisten outer edge of circle with Original Chai concentrate. Drop ½ tsp. of filling into center of circle. Seal and pinch together edges, shaping into Haman's hat, a three-sided triangle. Place on well-greased cookie sheet and bake at 375 degrees for 10 minutes or until golden. Yield: 30 cookies
