In a large bowl, combine 1-cup butter, sugar, egg, 3 Tbsp. Oregon Chai concentrate. Beat until creamy. Add flour and baking powder and beat until well blended. Divide the dough into two pieces, cover and refrigerate until firm (2-3 hours or overnight.)
Preheat oven to 400 degrees Fahrenheit. On a lightly floured surface, roll out dough to ¼ inch thick. Cut with cookie cutter. Place on ungreased cookie sheet. Bake 6-10 minutes or until lightly browned. Cool completely.
