- Fruit Filling
- 3/4 cup Pitted Prunes
- 1/3 cup Seedless raisins
- 1/4 cup Oregon Chai The Original™ Chai Tea Latte Concentrate
- 1/4 cup Shelled walnuts
- 1/4 Apple with peel
- 2 tbsp. Sugar
- Juice and rind of 1/4 lemon
- 2/3 cup Butter
- 1/2 cup Sugar
- 1 Large egg
- 1/2 tsp. Vanilla
- 2 1/2 - 3 cups Unbleached all-purpose flour
- 1 tsp. Baking powder
- 1 dash Salt
Fruit-filled Hamantaschen, the traditional Jewish treat, with Oregon Chai Original Chai concentrate - the tea for life.
Make dough: cream butter with sugar. Add egg and vanilla and continue creaming until smooth. Add flour, baking powder and salt. Blend until well mixed and forms a ball.
Refrigerate dough 2 to 3 hours, or overnight.
Make filling: simmer prunes, raisins and Original Chai concentrate in a covered pan for 15 minutes. Add nuts and apple. Place in food processor and grind. Add sugar, lemon juice and rind and mix well.
To form Hamantaschen: roll out ¼ of the dough to 1/8 inch thick. Cut into 2 ½ inch circles. Moisten outer edge of circle with Original Chai concentrate. Drop ½ tsp. of filling into center of circle. Seal and pinch together edges, shaping into Haman's hat, a three-sided triangle.
Place on well-greased cookie sheet and bake at 375 degrees for 10 minutes or until golden.
