Peanut Butter Power Cookies

Ingredients:

  • 1 cup Flour
  • 1 cup Whole wheat flour
  • 1/4 cup Ground flaxseed
  • 1 tsp. Baking powder
  • 1/2 tsp. Salt
  • 1 1/4 cups Granulated sugar
  • 3/4 cup Creamy peanut butter
  • 2 Large eggs
  • 1/4 cup 1% milk
  • 1/4 cup Canola oil
  • 2 tsp. Vanilla extract
  • 1/2 cup Mini chocolate chips

Directions:

Preheat the oven to 350ºF. Lightly oil or coat two large baking sheets with nonstick cooking spray and set aside. Whisk together the all-purpose flour, whole wheat flour, flaxseed, baking powder, baking soda, and salt in a bowl and set aside. Combine the sugar, peanut butter, eggs, milk, oil, and vanilla in a large bowl and beat on medium speed until well blended, about 2 minutes. At low speed, gradually beat in the flour mixture until just combined. Stir in the chocolate chips.
