Debbie's Scramble!

Ingredients:

  • 4 slices Canadian Bacon
  • 2 cups Fresh or frozen hash browns
  • 2 eggs or 1/2 cup egg substitute Eggs or egg substitute
  • 1 tbsp. Fat-free margarine

Directions:

Spray a large frying pan with nonstick cooking spray, and put pan on low to medium heat. Cut bacon slices into smaller pieces, and heat them in the pan. Add 2 cups of frozen or fresh hash brown potatoes. Follow hash brown package directions which generally call for heating potatoes for 3-5 minutes before flipping, and cooking other side for another 3-5 minutes. While hash browns are cooking, scramble 2 eggs and 1/2 cup egg substitute (e.g, eggbeaters). Once potatoes are finished cooking, add 1 tablespoon of fat-free margarine. Add egg mixture to potatoes and cook for 1-2 minutes on each side. Season to taste and serve.
