Strawberry Rhubarb Crisp


  • 4 cups Chopped rhubarb and strawberries
  • 1 cup Sugar
  • 1 tsp. Cinnamon
  • 1 cup Oatmeal
  • 1 cup Flour
  • 1 cup Brown sugar
  • 1/2 cup Butter, melted
  • 1 tsp. Baking powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Cinnamon


Preheat oven to 350 degrees.In an 8x8" pan, toss together 4 cups chopped rhubarb and strawberries, 1 cup sugar, and 1 tsp. cinnamon.Mix together oatmeal, flour, brown sugar, butter, baking powder, salt and 1/2 tsp. cinnamon with a pastry blender (or a fork) and sprinkle on top of rhubarb.Bake all of this sweet-tart goodness for 45 minutes. Serve warm by itself, OR with cinnamon whipped cream or ice cream AND a cup of Original Oregon Chai.
