Preheat the oven to 350 degrees. In a large bowl, mix together the eggs, oil & sugar. Stir in the grated fruit and veggies. In another bowl, mix together the flour, Oregon Chai Original Latte Mix, baking powder and salt. Pour the dry ingredients into the bowl of wet ingredients and combine. Mix in the vanilla yogurt, being careful not to over mix. Spoon the batter into oiled mini muffin tins and bake for 10-15 minutes. Let cool. Top with ½ tsp vanilla yogurt.
